Gingerbread Raw Chocolate

Gingerbread raw chocolate was created because I wanted to make healthier Christmas treats, with a hint of spices that are usually used when making Christmas goodies like gingerbread cookies. I thought that combining gingerbread spice to raw chocolate would be a nice combination, and it turned out well. I used maple syrup as a sweetener, the syrup is not raw ingredient but I prefer to use it when making raw treats, you can replace it with some other sweetener if you prefer.

Terra nova makes great organic gingerbread spice mix with ceylon cinnamon, ginger, cardamom and clove tree, I bought one jar from organic store last year and there is still much left of it so I’ll have to create a lot of recipes tasting like gingerbread! Maybe next time I could try to make some raw gingerbread cookies, bliss balls or even gingerbread hot chocolate. I really like that Terra nova uses Ceylon cinnamon in their spice mix, because it contains much less coumarin than regular cinnamon, coumarin is moderately toxic to the liver and kidneys so high doses of cinnamon is not very good for your body.

Vegan Borscht & Sour Cream Recipe

It’s time to make some soup again! I love beetroot and wanted to create vegan borscht recipe for this winter, I already had my old borscht recipe, which I changed a little bit to make It easier to find all ingredients and to make it without having to go trough many different shops to find what you’ll need for making this soup.

At first I tried to look vegan options for sour cream, but it was so hard to find vegan option for it, so I decided to create my own version of it. At first I tried to make  sour cream with some coconut milk, lemon juice and salt (in pictures) blended together, but failed with that version. The texture of coconut sour cream was too thin and when I added that to hot soup it melted really fast. Then I tried to make sour cream with cashews, lemon and nutritional yeast and that combination turned out to be good.

This recipe is also very nice and easy to do, because you can get all ingredients really easily all year round, even if you are buying all ingredients organic. One thing that I want to mention is that beetroot will color everything pink! So be careful when you peel and grate them, also your hands will be pink, but don’t worry the color will fade in a day or two. Remember to be careful with all your kitchen fabrics like towels, table cloths or table linens etc. It’s harder to get that pink color away from fabric materials.

Warming Pumpkin Soup

I created this warming pumpkin soup recipe, because I have been craving warm and spicy foods so much now when those warm and cozy fall nights has turned to be cold, windy and snowy! There is nothing better than warm soup, cardigan & sitting near the fireplace all day long.

It’s now pumpkin season going on, so I wanted to create something spicy to neutralize the sweetness of the pumpkin. I also wanted to make this soup vegan and nourishing, so I made it with low heat and used only organic ingredients. To give the soup some flavor I added some carrots, red pepper and chili and then I added coconut milk to make it soft and creamy, on top of the soup I also sprinkled some hemp seeds and basil.

For some reason every fall I start to cook more soups and smoothies, It’s easier to buy ingredients that are in season and to use berries from freezer that I have collected at summer. Now when salad season is over and I can’t harvest my salads from my own garden anymore I also like to make a lot of green smoothies, they are a good source of nutrients and you can use so many different green veggies and herbs to create most delicious green smoothies ever (here is link to my Super Green Smoothie recipe).

WARMING PUMPKIN SOUP

  • 1 Small butternut squash
  • 4 Carrots
  • 1 Red pepper
  • 1 Red onion
  • 1 Clove of garlic
  • 1/2 Chili
  • 1 Can of coconut milk
  • 2 tsp Coconut oil
  • 1/2 tsp Turmeric
  • Pinch of salt
  • Pinch of pepper
  • Juice of 1/2 lemon
  1. Cook onion in a large pot with low  heat with coconut oil, then add chili and garlic. Cook for a few minutes and add turmeric in.
  2. Mix well and add chopped red pepper, carrots and squash into the pot. Pour in the coconut milk and water to cover the veggies and gently bring to the boil.
  3. Reduce the heat a little and simmer for 20 minutes, then remove from the heat. Add rest of the spices. Using a stick blender, blitz the soup until creamy and smooth, add a splash more water if it is too thick.
  4. Squeeze lemon juice into the soup, and stir the soup with a wooden spoon.
  5. Taste and adjust the seasoning, and serve topped with hemp seeds and basil leaves.

Super Green Smoothie

Super simple, alkalizing and delicious green smoothie for instant energy boost! I created this super green smoothie a few years ago and it instantly became one of my favorites. You can add some raw natural sweeteners like stevia leaves (1-4 is enough!)  if you are new to green smoothies and this tastes bitter or a bit too ”green” for you.

It’s super easy to change the recipe ingredients by season, I like to rotate my leafy greens between using parsley, kale, nettle, cilantro, spinach or dandelion greens. Sometimes I also like to add some wheatgrass juice to get more nutrients, amino acids and chlorophyll into my diet. Avocado makes green smoothie more creamy, is full of healthy fats, carotenoids and helps you to absorb more nutrients. Water and fiber of the cucumbers support your digestive system and can helps you to stay hydrated. Lemon juice gives nice fresh taste to the green smoothie and helps your body to neutralize acid waste.

I try to make at least one green smoothie everyday, because it’s so easy way to eat more greens. Sometimes when there has been period of time when I haven’t had time to make my green smoothies, I have noticed that it’s not so easy to eat as much raw greens and veggies and also my energy levels aren’t as good as when I have started my day with green smoothie.

My favorite way is to blend big amount of fresh greens and veggies and drink it up! Actually I try to chew it up, because when we are chewing our food we are covering that food with Saliva which contains an enzyme that helps to break the food down for the digestive process.   If we don’t chew our food because we are consuming it in the smoothie form then we are also giving it to our digestive system without an important enzyme to help it digest.

SUPER GREEN SMOOTHIE (two servings)

  • 2 Cucumbers
  • 1 Avocado
  • One bunch of parsley
  • 2 tps Vitamineral Green*
  • Juice of one lemon
  • pinch of salt
  • Water to get the right consistency
  1. Add leafy greens into blender with some water and blend together until smooth.
  2. Add cucumber, avocado and green powder*, then blend again.
  3. Add lemon juice, pinch of salt and water to get right consistency to your green smoothie.
  4. Enjoy!

Nettle Chips

Nettle chips are tasty, crispy and best of all.. Almost free! These healthy chips are also really easy to make and you can harvest the whole plant and use for many different purposes if you like, but you need only nettle leaves for the chips. Nettle is rich in Vitamin A, C, D, K, calcium, iron and a protein.

Best time to harvest nettles is in late spring, before they begin to flower. Be sure to harvest nettles from clean areas only, avoid places near highways, industrial areas and places where people spray weed killers. Weed killers are often used in the streets and parks of many towns and cities, also some people spray it around their yards.

Nettle grows wild almost all over the world and it can be harvested for free. Nettle stings because it has tiny spines that has formic acid and other chemicals mixed with it, which causes the burning and stinging sensation when skin contacts with the plant. The sensation stays for a while so I recommend to use gloves when harvesting nettles, also plastic bag and a pair of scissors will be necessary tools for harvesting nettles. Remember also to protect your legs and arms!

When nettle is dried, cooked or crushed it will lose the stinging and you can eat it without the burning sensation. That’s why we will dry it with dehydrator or in oven, if you don’t own dehydrator.

NETTLE CHIPS

After you have collected nettles rinse them really well with cold water to remove possible dirt from them and dry them gently with towel or salad spinner.

Ingredients:

  • One liter of nettle leaves
  • 2 tbsp olive oil
  • pinch of salt
  • pinch of pepper

 

  1. Mix salt and pepper with olive oil and massage gently to nettles (remember to protect your hands from stinging!).
  2. Put the nettles for approximately 8 hours at 42 degrees Celsius into the dehydrator, you can also use your oven to dry your nettle chips.

I really love to snack nettle chips instead of regular ones, these taste amazing! Also you don’t have to worry about eating these too much, because these chips are so healthy and natural.

Diy Charcoal Teeth Whitener

Do you want clean and white teeth? I do. And as naturally as possible! I found charcoal teeth whiteners about three years ago and went totally crazy about them. I have tried many different kind of charcoal products that promise to whiten your teeth easily and naturally without harmful chemicals. Every product that I have tried works, but you can get exactly same results and save money by making your charcoal teeth whitener by yourself.

Activated charcoal removes toxins when they become attached to the surface of the charcoal. It absorbs all those pesky stains from drinking coffee, tea and wine or smoking and eating coloring foods like blueberries.  It will not absorb to the body, but will pass trough the GI system, so chemicals and toxins stick to it. Then charcoal will  pass through the body and are removed by the digestive system.  I like to make my teeth whitener mix with coconut oil because of its antibacterial properties, but you can make it with water also.

But there is a little warning! It will be messy if you get charcoal to your clothes etc. If that will happen, no worries, it will go away when you wash your clothes as usually. Also it would be good idea to also to rinse your sink after whitening, or it will look a bit nasty after few times you have whitened with charcoal.

DIY CHARCOAL TEETH WHITENER

  • 1 tsp coconut oil
  • 1 tsp activated charcoal or 2 activated charcoal capsules
  • 1-2 drops of frankincense oil (optional)
  1. Add all ingredients in  small cup and mix together. wash your teeth for one to two minutes, then rinse with water.
  2. Wash your teeth again with your normal toothpaste to get leftover charcoal away.
  3. You can also floss your teeth and clean your tongue with a tongue cleaner to get super clean and fresh smile!

Fiskars Village – Finland

One place in Finland where I always feel like I have entered to a different country by it’s beautiful architecture and nature is Fiskars. It is located at Raasepori, about an hour drive from Helsinki. This small village is full of beautiful old buildings that has been restored and given new purposes to create this at the same time very modern, artistic and still idyllic outcome. Also that old time feeling is still around.

Fiskars is full of small boutiques, shops, restaurants, chocolate shop, brewery & atelier. There are so much works to see from local artisans, designers and artists. Every year Fiskars is full of different kind of events such as firelight, when river that goes through the center of the village will be full of giant lanterns that light up the village at evenings. This years firelight has been decorated with animal theme, you can see few photos about this years lanterns below.  There are also a lot of art exhibitions, markets and food festivals. At summer there is also a music festival called Faces Festival, which is a meeting point for people from different cultures and backgrounds.

If you like spent time outdoors and want to see Finnish nature you can go mountain biking, stand up paddling, fishing or even camping. There are also lot of other beautiful places to adventure near the village as Raseborg castle, Billnäs, Svarta manor,  Ekenäs & Dagmar’s spring.

Only thing that I have many times thought is a downside when traveling to Fiskars is that some of the places are closed at afternoon so there is not always so much time to wander around this idyllic village, especially if you are not  morning person.

Birch & Ginger Infused Water

Here is super simple and refreshing recipe for birch and ginger infused water that helps you to detox your body naturally! Really good way to hydrate your body and this is great for you non-water lovers out there because the ginger, citrus and birch flavor the water. I added some raw honey this time to add some sweetness, but I think it’s nice and fresh also without it. I really love to make infused waters, because fresh fruits, berries and herbs add nice taste to the water. There are tons of options to add your infused water, some of my favorites ingredients are mint, ginger, lemon, raspberries, birch and cherries.

Ginger – Helps with gastrointestinal symptoms and nausea. Ginger is also very anti-inflammatory and has immune boosting action that can help with colds and flus.

Lemon – Is good source of vitamin C. Vitamin C neutralizes free radicals in your body and is vital to the function of a strong immune system. Lemons contain phytonutrients with antioxidant and antibiotic effects.

Birch – Stimulates the cleansing systems of the body and helps to eliminate toxins. Birch helps your kidney and liver functions and is naturally diuretic.

Raw Honey – It has anti-inflammatory effects and ability to soothe coughs. Antioxidants of the honey help to protect your body from cell damage due to free radicals.

BIRCH & GINGER INFUSED WATER

  • 2-3 cm ginger
  • 1 tsp honey
  • Spring water or purified water
  • 1 Handful of Fresh birch leaves
  • Juice of half a lemon
  1. Peel and slice ginger and place inside of a pitcher with birch leaves.  Add water, honey and lemon juice. Use the back end of a wooden spoon and smash the ingredients to release some flavor.
  2. Refrigerate for a hour to allow ingredients to release more flavor to the water.
  3. Enjoy!
